Italian Sausage Romaine Salad

Chef Brian Luscher from Good Local Markets, The Grape and Luscher's returns to Good Day to make a homemade Italian sausage and romaine salad.


Italian Sausage Romaine Salad

Sweet & Spicy Italian Sausage, Cooked, Sliced 4 ea
Romaine Lettuce, cleaned, cored, chopped 1 head
Texas Tomatoes, cored, chopped 2 ea
Red onion, small, peeled, sliced 1 ea
Olives, black, chopped  6T
Croutons 2 c
Parmesan Cheese, Grated  1 c
Red Wine Vinaigrette  1 c
Fresh Cracked Black Pepper  To Taste
Crushed Red Chili Flakes  To Taste


Croutons

Italian bread, torn 2 c
Olive oil 1/4c
Melted butter 1/4c
Salt and pepper to taste

Combine all in a bowl and mix well. Place on lined cookie sheet and put into 350 degree oven for approx. 10-15 minutes or until toasted. Remove from oven and allow to cool.


Red Wine Vinaigrette

Red wine 2 T
Red wine vinegar 2 T
Lemon juice 2 T
Dijon mustard 1 T
Honey 1 T
Salt and pepper to taste
Olive oil 1/4 c
Vegetable oil 1/4 c

Combine all into a jar with a tight fitting lid. Shake for 30 seconds or until desired consistency.
