Guacamole

MasterChef Junior contestant Henry Hummeldorf visits Good Day to show us one of his favorites -- guacamole.


Guacamole

2 large ripe avocados pitted and sliced
1 small lime
2 tbsp jalapeño, seeded and finely chopped (if you like spicy, save a few seeds to add!)
1 small red tomato finely chopped (about ½ cup)
1/3 cup red onion finely chopped
1/3 cup chopped fresh cilantro
½ tsp pink Himalayan salt
1 minced garlic clove
Pepper to taste
Chili pepper seasoning of your choice (I have my own mix of several chili powders with peppercorns)

Peel and slice avocados and place in medium bowl.

Squeeze lime juice over avocado to preserve color and add citrus flavor.

Add jalapeño, onion, tomato, cilantro, salt, garlic and other seasonings.

Mash together with a fork to keep texture.  I prefer mine with lots of lumps and texture!

Taste and add more chili pepper seasonings or salt if needed.

Serve with tortilla chips.  Garnish with extra cilantro.  

* I prefer serving mine with warm tortilla chips straight from the oven.  To make them easily, I buy flour tortillas, cut them into triangles, arrange them in a single layer on a baking sheet, spray with olive oil cooking spray and cover with Himalayan salt.  Bake them in the oven at 350 degrees for a few minutes until they are warm and crunchy.
