Better Meatloaf
Chase Carleson from Cheddar's Scratch Kitchen stops by Good Day to make a meatloaf that he says is better than your mom's. Cheddars now has 13 locations in the Dallas-Fort Worth area.
Cheddar’s Scratch Kitchen Meatloaf
For the Meatloaf:
1 lb. ground beef
1/3 cup onions, diced
1/3 cup green bell peppers, diced
2 cloves garlic, chopped
1/2 cup melted butter
1/2 cup of milk
2 tbsp. dried parsley
1 tbsp. salt
1 tbsp. pepper
2 eggs
1 tbsp. ketchup
1 cup Breadcrumbs
For the Sauce:
1 cup brown sugar
1/2 cup ketchup
¼ cup Worcestershire sauce
Creating the Meatloaf:
In a large saute pan, add the fresh-diced onions, green bell peppers, fresh chopped garlic and melted butter. Saute until vegetables are slightly golden.
Add this mixture to a bowl with the remaining ingredients for the meatloaf: milk, dried parsley, salt and black pepper, ketchup, eggs and breadcrumbs. Combine well. Add in the ground beef and mix evenly.
Press the mixture into a meatloaf pan.
Creating the Glaze:
Add the ingredients for the sauce – brown sugar, Worcestershire and ketchup – in a saucepan and cook at a medium heat until the ingredients are mixed well.
Cooking:
Now, top the meatloaf with the glaze. Place it in the oven 45 minutes or until the internal temperature reaches 165 degrees. Enjoy!
Recipe serves four.
