Banana Pudding

Bob Hentschel from Ten 50 BBQ shares the recipe for banana pudding.


4.5 qt. Half and Half
1 egg yolk
3 cup sugar
1.25 cup corn starch
1 tbsp kosher salt
6 tbsp melted butter
4 tbsp vanilla extract

Pie Crust

6 oz whole grain crackers
.5 cup pecans
1 tbsp sugar
1/8 tsp ground cinnamon
Blend all together into fine crumb with food processor.


Use 1 qt of half and half to dissolve sugar and salt, then add corn starch slowly to incorporate. Add the rest of the half and half and egg yolk to the mix.

Use double jacket kettle to cook the pudding. Turn on kettle, wait until water pressure rise to 7. Then add wet mix. Let it warm until steam is visible. use a wire whisk to stir constantly until cooked. about 15 minutes.

Add melted butter and vanilla flavor before pudding is out of kettle. Use a mixing bowl with ice to cool it down. Set pudding on top of ice and stir until chilled.
