Smokey Peach Shrimp with Spicy Slaw


12 large shrimp

1/4 cup bacon, diced

1/4 cup onion

1 peach diced

1/4 cup bourbon

1/4 pound butter, unsalted

Kosher salt

Juice of 1 lemon

2 cups cabbage, shredded

1/2 red onion, thinly sliced

1 jalapeño, deseeded and sliced

1/2 bunch of cilantro, chopped

1/2 cup mayo

3 tablespoons sugar

1/4 cup of apple cider vinegar

Juice of 1 lime


In a large sauté pan add 2 tablespoons of unsalted butter on low heat, season shrimp with salt and add to pan. Allow to cook for a minute add in bacon and allow to render. Add in onions and peaches. Season with salt and deglaze with bourbon. Squeeze lemon and finish with remaining butter. Allow to simmer.

While shrimp is simmering start slaw. In a large bowl combine sugar, mayo, lime, and vinegar, salt to taste, whisk thoroughly. Fold in cabbage, onion, jalapeño, red onion, and cilantro.


Place slaw on plate, arrange shrimp around slaw, spoon sauce over shrimp and enjoy!!!!!!
