Pimento Cheese and Scallion Biscuits and Fingerling Potato Salad
Quantity Ingredient
8 cups sifted all purpose flour
2 cup pimento cheese
4 tbl sifted baking powder
2 tbl sea salt
2 tbl sugar
½ lb crisco shortening
½ lb diced unsalted butter
1½ cup buttermilk
1 cup grated cheddar cheese
0 as needed all purpose flour for dusting
0 as needed melted unsalted butter
Method for Biscuits:
1. Sift together all dry ingredients (flour, salt, sugar and baking powder)
2. Cut in butter, pimento cheese and shortening until will distributed throughout flour mixture
3. Gently add buttermilk and cheese, being careful not to over mix
4. As needed sprinkle flour onto the table so that dough doesnt stick
5. Cut biscuits with dough cutter
6. Brush biscuits evenly with melted unsalted butter
7. Bake at 400 degrees for about 10 to 15 minutes, making sure you rotate pan while baking
Fingerling Potato Salad
Quantity Ingredient
1 lb sliced banana fingerling potato
1 stalk diced celery
1 ea diced red bell pepper
½ ea diced red onion
4 each diced hard boiled egg
¼ bunch chopped Italian parsley
1 cup aioli
2 tbl whole grain mustard
0 as needed sea salt
0 as needed pepper
0 as needed olive oil
Procedure
1. Toss potatoes with desired amount olive oil, salt and pepper and bake at 350 degrees until soft to the touch
2. Place hot potatoes into a stainless steel bowl and add remaining ingredients to the bowl
3. Mix until all ingredients are well combined
4. Add additional salt and pepper as desired
