Oven Pork Ribs with Barbecue Sauce

Oven Pork Ribs with Barbecue Sauce

Yields one rack (11 to 13 ribs)
Temperature: 350 degrees F
Smoking Time: 2 to 2 ½ hours

1 rack St. Louis-style pork ribs

3 ounces Rib Ticklin' Rib Rub (see below)

Barbecue Sauce

Set your oven to 350 degrees F. Sprinkle rib rub over the entire rib rack and use your hands to rub it in. Place your rack of ribs in tin foil in the oven for between 1 hour and 1.5 hours. Remove the ribs from the oven and place sauce over the entire rib rack. Place the ribs back in the tin foil in the oven bone-side down for up to 30 minutes.

I suggest performing what's called a "break test" for doneness. Grab the rib rack with a pair of tongs. If they immediately begin to "break," (not bounce) they're ready. If they are still "bouncy" let them cook for another 20 minutes. Once all of the ribs have passed the "break test," remove them from the oven, set aside and let them rest for 5 to 7 minutes.

To cut and serve, flip the ribs bone-side up to get a cleaner cut and allow the bones to be more visible. Make a clean cut between the bones. You should get 11 to 13 ribs from one rack. Flip the ribs over and glaze them with barbecue sauce and serve hot.

Rib Ticklin' Rib Rub

Yields about 2 cups

½ cup of salt

1 cup of sugar

¼ cup of paprika

1 ½ tablespoons granulated garlic

½ tablespoons ground cumin

1 ½ tablespoon lemon pepper

Thoroughly combine all ingredients. You can store this run in an airtight container for up to three months.

Barbecue Beans

Serves 6 to 8

1 slice Applewood bacon

3 tablespoons maple syrup

5 tablespoons light brown sugar

2 teaspoons yellow mustard

½ smoked paprika

1 teaspoon molasses

1 ½ liquid smoke (available in your grocer's sauce aisle)

2 teaspoons apple cider vinegar

¼ cup of beef broth

1 (28-ounce) can pork n' beans

Kosher salt, to taste

Cracked black pepper, to taste

Cute the slice of bacon in half and saute it in a medium pot over low heat. Render the bacon for 7 to 8 minutes, stirring every 2 minutes.

While the bacon is rendering, mix together the syrup, brown sugar, mustard, paprika, molasses, liquid smoke, vinegar, and beef broth in a large bowl. Set aside.

Once the bacon is rendered, add the mixed ingredients to the pot, and stir for 10 seconds to deglaze the pan. Add the pork n'beann and stir. Allow the beans to simmer on medium-low heat for 10 minutes. Season to taste and serve.
