Holiday Turkey Sandwich

Chef Grant Jones from the East Hampton Sandwich Company stops by Good Day to share something from the new winter menu. The holiday turkey sandwich has cranberry cream cheese, spinach, fried onion strings and a cinnamon-spiced black cherry compote. It's perfect for the season.


Black Cherry Compote

1 ¼   Pounds Frozen Black Cherries, Pitted
1/2 Cups Orange Juice
1/2 TBSP Ground Cinnamon
1/3 Cup Brown Sugar

Combine all ingredients in a heavy bottom pot. Bring to a boil at high heat. Reduce to low heat and simmer for 10 minutes. Allow to cool on a sheet tray in the refrigerator.


Cranberry Cream Cheese

 ½ Pound Dried Cranberries
½ Cups Orange Juice
1 TBSP Cinnamon
2 TBSP Granulated Sugar
½ Pound Cream Cheese, Softened

Combine cranberries, orange juice, cinnamon and sugar in a heavy bottom pot. Bring to a boil at high heat. Reduce to low heat and simmer for 10 minutes. Allow cranberries to cool. Combine cream cheese and cranberries in a food processor and pulse until thoroughly combined.


Fried Onion Strings

1 Pound Yellow Onions, Thin Slice
4 Cups Seasoned Flour

Separate onion strings and place in the seasoned flour. Gently toss onions in flour and ensure all onions are coated. Place coated onions in a 350 degree fryer and cook for 90 Seconds. Remove onions, drain excess oil and season with a pinch of salt.
