DALLAS - Sandy Bussey with BB Bop Seoul Kitchen visited the Good Day kitchen to share the recipe for spicy Gochujang wings for the Super Bowl.
Bussey and her husband run the family-owned restaurant known for a fusion of Korean and American flavors.
Spicy Gochujang Wings
2 Qts Vegetable Oil
2 lbs Jumbo Chicken Wings, separated into drums and flats
Dry Dredge
1cup Corn Starch
1/2 cup Rice Flour
2 Tbsp Kosher Salt
SOF Wing Glaze
1 cup Gochujang
3 Tbsp Toasted Sesame Oil
3 Tbsp Lemon juice
2 Tbsp simple syrup
2 Tbsp Sprite
2 Tbsp Rice Vinegar

Heat vegetable oil in a heavy pot to 350 degrees Fahrenheit.
In a large mixing bowl mix dry ingredients, set aside until ready to fry wings.
In another mixing bowl add all wet ingredients and mix thoroughly.
When ready to fry, add chicken wings to dry dredging ingredients, mix until thoroughly coated, place wings in a wire basket and shake to remove excess dry ingredients. Carefully add wings to hot oil and fry for 7-10 minutes, depending on the size of the wings. This step can be done prior to serving, and allow the wings to cool. When ready to serve refry wings for 3 minutes. Remove wings from oil and allow oil to drain off. Place on baking sheet and brush glaze with pastry brush until coated all over. Arrange on serving plate, garnish with sesame seeds and/or julienne scallions, and enjoy.
