Mango Sticky Rice Smash

Braden and Yasmin Wages from Malai Kitchen stop by Good Day to make a delicious dessert with Indian influences. Their newest location at the Shops at Clearfork in Fort Worth opened last month.
 

Mango Sticky Rice Smash

Sticky Rice Custard:
2 cups coconut milk
1 cups sugar
1/2 teaspoon salt

Bring all ingredients to a boil. Chill.

Sticky Rice:
2 cups glutinous Rice
4 cups water

Soak 8 hours, drain, steam in bamboo basket for 15 to 20 minutes over low heat.

Rice Crispy Treat:
1/4 bag marshmallows
4 T butter
1 t chili flakes
2 cups rice cereal

Melt marshmallows and butter. Add chili flakes and rice until coated. Spray sheet tray and spread mixture evenly.  Allow to cool before cutting into circles.

Mango Sticky Rice Smash:
½ cup Custard
3 oz Sticky Rice
¾ cu ripe mango, diced
1 ea rice crispy treat 

Make a sticky rice "pattie," lay the rice crispy treat on top, pour the custard over the rice crispy treat and add the fresh chopped ripe mango. Repeat for remaining 3 servings.  Smash it all together and enjoy!
