Chicken Pot Stickers

Chicken Pot Stickers

24  wonton skins
2 cups  Roasted chicken breast (skinless and diced small)
½ cup  green onions (chopped)
1 tsp  Fresh garlic (chopped)
1 tsp  - Fresh ginger (peeled  and chopped)
½ tsp  salt and pepper
½ cup  - cold water
1 tsp  sesame oil

For chicken filling: Place chicken, green onion, ginger, garlic, salt and pepper and ¼ of the water in a food processor and blend until smooth.

For pot stickers: Place 4 - 6 wonton skins on a clean flat surface with a corner facing up (diagonally). Using your fingers, dip them into the remaining water and lightly wet the perimeter of the wonton skin. Place a teaspoon of the chicken filling on the middle of each skin. Pull the top and bottom corners together and pinch lightly to seal. Start at 1 end and pinch and fold the skins across to seal, then place on a plate or metal sheet tray. Continue this process until all the wonton skins are filled and sealed. 

Tip: Doing 4-6 at a time and using cold water prevents the wet skins from becoming gooey, sticky and hard to work with.

To Cook: In a large pot bring 1 gallon of water to a boil and add the olive oil. Drop in the pot stickers a couple at a time and use a slotted spoon to stir gently and prevent sticking. When the water returns to a boil the pot stickers will begin to float as they're cooked. Use the slotted spoon to remove them from the water. They can be served immediately or refrigerated and reheated to serve later.

Serve with soy sauce, teriyaki, sweet and sour or any sauce you enjoy.
