Southwest Quinoa Salad
Honey Lime Dressing
1/4 cup lime juice
1/4 cup olive oil
2 Tbsp honey
1 Tbsp apple cider vinegar
1/4 tsp salt
1/4 tsp pepper
Salad
Combine the following ingredients and marinate overnight:
2 Cups cooked Quinoa
1/3 cup chopped red bell pepper
1/3 cup chopped cilantro
1/2 cup black beans
1/2 cup corn
1/2 cup chopped green onion
1/2 cup halved cherry tomatoes
1/2 cup dressing
Corn Tortilla Strips
Brush olive oil onto corn tortillas
Slice into strips
sprinkle with salt
Toast until crunchy
To Serve the Salad
Top with 1/8 avocado, chopped.
Finish with 4-5 corn tortilla strips
