Cheese Grits

1 1/2 cups stone ground yellow grits

6 cups low sodium chicken stock

1/2 tsp cayenne pepper

4 Tbsp unsalted butter

salt and pepper to taste

Cheese to Taste-

3/4 cup colby jack

1/4 cup parmesan

1/4 sour cream or creme fraiche

1/2 cup thinly diced green onion


Combine grits and chicken stock, bring to a boil in a heavy bottomed sauce pan over medium high heat. Lower heat and simmer, stirring frequently until desired texture is achieved (about 30 minutes). Season To Taste. Stir in preferred cheese style and amount.
