Chef Suki Otsuki from Mudhen Meat and Greens returns to Good Day to share the recipe for a flavorful family BBQ sauce.
Wiltons BBQ Sauce
2c yellow onion, julienne
2/3c coconut sugar
1/3c apple cider vinegar
2/3c white vinegar
1T garlic powder
1T chili powder
1T mustard powder
1T pomegranate molasses
1/3c liquid aminos
1.5c chicken stock
Sweat onion in olive oil on low heat.
Add coconut sugar and continue to caramelize.
Add all dried spices and toast while stirring until syrup is formed.
Add vinegar and simmer/reduce.
Add molassess, aminos and ketchup. Simmer for 1 hour or so.
Finally, add chicken stock and reduce.
Blend with a food processor until emulsified. Should be the consistency of a thick vinaigrette.
