Truffle Cheese Grits

Kenny Bowers' Valentine's Day "Aphrodisiac" Truffle Cheese Grits
1 cup Quaker Oats quick grits
1 cup water
1-1/3 cups heavy cream
2 oz butter (unsalted)
1 tsp salt (iodized)
1/4 tsp cayenne pepper
1/4 tsp cumin
1/4 tsp tumeric
1-1/2 tsp white truffle oil
2 cups colby jack cheese (shredded)
In a medium stock pot over med high heat bring butter, cream and water to a low boil. Then add salt and truffle oil.
Gently a little at a time add grits whisking continually so that they ae evenly distributed and don't clump. Cook for approximately 5 minutes until thickened creamy and realitively smooth.
Add cheese using a whisk making sure it is evenly distributed. When all has been added immediately remove from heat and serve.
