Thai Coconut Chicken Bowl 

Fill your bowl with roasted vegetables, quinoa, and chicken. Top with Thai Coconut Sauce, chopped peanuts, and cilantro.  

8 oz Roasted Vegetables- Broccoli, Cauliflower, Carrott, Mushroom, Onion 
6 oz Quinoa 
4 oz Chicken 
2 oz Thai Coconut Sauce 
1 Tablespoon Chopped Peanuts
1 Tablespoon Chopped Cilantro 

Thai Coconut Sauce

3 Cups Coconut Milk 
2 tablespoons Red Curry Paste 
1/3 Cup Agave Nectar 
1/3 Cup Gluten Free Soy Sauce 
3 Tablespoons Creamy Peanut Butter 
1 Tablespoon Rice Vinegar 
1/4 Cup Corn Starch 

Yields: 1 Quart 

Mindful Matcha Juice

1.5 oz Fresh Spinach
1/2 Peeled Kiwi
6 oz Fresh Pineapple
1 oz Fresh Ginger
1/2 Green Apple
5 oz Cucumber
1/4 Cup Matcha Water

Yields: 16 oz Juice
