Shrimp & Scallion Dumplings

Chef Kent Rathbun returned to the Good Day kitchen to make potstickers. He said they're versatile and easier than you think.
 

Shrimp & Scallion Dumplings

2 tbsp sesame oil
2 tbsp garlic cloves, peeled and minced
2 tbsp shallots, peeled and minced
2 ounces ginger root, peeled and grated
1 tbsp lemongrass, peeled and minced
1 lb shrimp (no shell), peeled and deveined and ground through a meat grinder
1 tbsp sambal
2 tbsp tamari soy sauce
½ cup green onions, chopped fine
48 pieces round dumpling wrappers
2 each whole eggs, whipped

In a saute pan on medium heat, saute in sesame oil the garlic, shallots, ginger and lemongrass until translucent. Remove from heat and set aside.

When the mixture is cool, add the ground shrimp, sambal, soy sauce and green onions and mix.

On a large flat surface, lay out the wrappers and brush with a thin layer of egg wash. Then add a small amount of shrimp mixture to the center of the wrapper. Twist the sides of the wrapper up around the mixture and seal the edges into a round dumpling. (Much like a beggars purse.)

Place on a greased perforated pan or steamer pan. Transfer to a steamer and steam until center is hot and cooked thru.

Serve steamed or sear in sesame oil until golden brown on the bottom and serve as a potsticker.


Citrus Mayonnaise

1 cup mayonnaise
1 cup sour cream
3 tbsp orange zest, grated
1 tsp kosher salt

In a mixing bowl, mix together all ingredients until incorporated. Transfer to a clean container and store properly.

 

Tangerine Ponzu Dressing

1 cup Mizkan seasoned rice vinegar
3 cups tangerine juice, freshly squeezed
1 tbsp lime juice, freshly squeezed
1 tbsp fish sauce
1 tbsp sambal
2 tbsp Thai basil leaves, picked and chopped
2 tbsp cilantro leaves, picked and chopped
2 tbsp mint leaves, picked and chopped
2 tbsp ginger root, peeled and minced
2 tbsp shallots, peeled and minced
2 tbsp lemongrass, peeled and minced

In a small stainless steel bowl, mix all ingredients together. Transfer to a clean container and store properly.
