Short Rib Egg Rolls

These are not your average egg rolls! Chef Scott Hoffner from DiDi's Downtown stops by Good Day to make egg rolls with delicious short rib.

Short Rib Egg Rolls

Short Rib

2lbs short rib
1 peel and chopped carrot
2 stocks of celery chopped
3 onions peeled and chopped
1 quart beef stock
1 cup of red wine
1 bay leafs
1 whole garlic peeled and chopped
1 whole jalapeno chopped
2 white onions, chopped

Heat the oven to 275. 

Place the flour, salt and pepper in a pie dish or pan. Coat each rib on all sides with the flour and set aside.

Heat a dutch oven or oven-safe pot over medium-high heat with a few drizzles of olive oil. Add 3-4 ribs at a time, browning on each side and remove to a plate.

Wipe out any black flour if there is any, leaving any browned bits in the pan. Turn the heat to medium and add the olive oil and butter.

Quickly add the onions, carrots, celery and garlic, stirring to combine. Cook for 5-6 minutes or until the veggies are tender.

Add the remaining flour and stir for 30 seconds. Add beef broth. Bring to a simmer. Add the bay leaves and place the short ribs back in the pot.

Place the lid on the pot and cook for 2 1/2-3 hours in the oven, or until the meat is falling off of the bones and the liquid has reduced down.

Sliced and caramelize 2 white onions and let cool down for mixture.

Egg Roll Mixture

Shred short rib and let cool down. Once short rib is cooled add 3 cups shredded jack cheese. Add 1 cup and half of hot sauce. Add caramelized onions.

Egg Roll Wraps

2 whole shell eggs beaten 
2 ounces of cornstarch
8 ounces of short rib mixture
4 egg roll wrappers

Once the mixture is cooled down, take two ounces of mixture and place in the center of the wrapper. Place egg wash on all four edges of the wrapper. Fold side edges inward towards filling and roll the egg roll. Dredge egg rolls into cornstarch, let rest for 5 minutes. Fry egg rolls 350 degrees for 3 minutes until golden brown and crispy.

Horseradish Sour Cream

1 cup sour cream
1 tbsp horseradish
1/4 tbsp garlic
1/4 Worcestershire
1/4 cup shredded jack cheese
1 tbsp honey
add salt and pepper to taste

Mix all ingredients in a bowl and serve with egg rolls or dollop on egg roll when serving.
