Grilled Pork Chops with Apples

Chef Scott Gottlich with The Seocnd Floor restaurant at The Westin Galleria in Dallas cooks up a classic summer combo -- pork chops and apples.


Grilled Pork Chop with Apples

4 pork chops
3 garlic cloves
1 sprig of fresh thyme, chopped
3 granny smith apples (peeled, cored and chopped)
1-2 bunches green onions
1 bunch fresh parsley, chopped
2 ounces unsalted butter
1 lemon
salt and pepper

In a plastic bag, marinate the pork in 1/4 cup of olive oil, throw in the garlic cloves and smash into pork chops with your hand. Add, thyme and 1/2 bunch of onion, chopped into the bag. Marinate for 6-12 hours. Place marinated meat on medium to high heat in a oversized pan on the stove. Sear on each side and then move to the oven and cook to desired temperature.

Peel and core apples. Cut into quarters and chop green onions. Toss these in the seasoned bag of olive oil. Just as the pork is finishing add the butter, lemon, apples, onion, parsley and salt and pepper as desired into the pan. Cook until the apples get golden on the stove and butter melts, typically just 1-2 minutes.
