Grilled Chicken Wings

Chef Zeb Hartline from the Gaylord Texan stops by Good Day to make chicken wings and promote Summerfest, which runs through Labor Day weekend.


Grilled Chicken Wings

Chicken Wings
Smoked Paprika: 2/3 C
Ground Corriander: 1/8 C
Salt: 1 lbs
Brown Sugar: 1.75 lbs
Granulated Garlic: 1/2 C
Ancho Chili Powder: 3/4 C
Black Pepper: 1/2 C
Onion Powder: 1/8 C
Cayenne: 1 Tblsp

Mix all dry rub ingredients well.

Rinse wings with cold water, and drain. Add half of the dry rub while tossing wings in bowl to evenly coat the wings. Let sit for 10 minutes to absorb the flavor of the rub.

Put wings on grill or griddle to gain the level of caremelization from the rub you would like to have on the wings. Cook till an internal temperature of 165 degrees.

If level of carmelization is reached and the internal temperature is not 165 degrees you can pull the wings off and finish them in the oven at 350 degrees.

Once wings are fully cooked toss with favorite wing sauce, BBQ sauce or any other favorite sauce you enjoy.
