General Tso's Chicken

Chef J. Sullivan from Pei Wei stops by Good Day to make General Tso's Chicken. It's now on the menu at all locations.
 

General Tso's Chicken

7 oz of chicken breast, cut into ½ oz size pieces (marinate overnight in eggs, salt, and white pepper)
Potato Starch (as needed)
1 TB of soybean oil
1TB fresh chopped garlic
4-5 dried chile pods (chile de arbol or similar)
1 tspn chile flakes
1 TB Sriracha sauce
1 TB Chile Paste
1 oz green onions (white part of stalks only)
1 oz julienne carrots
1 oz ¼" diced red bell pepper
2 oz Sesame Sauce
2 oz Chicken or vegetable stock
1 TB Pure Cane Sugar
1-2 tspns cornstarch to thicken sauce

Cook chicken according to your preference. You can shake the chicken in potato starch and fry in oil, or boil the chicken without starch in water for a healthier option. Reserve cooked chicken. Preheat wok or skillet on high flame or electric burner setting and add 1 TB of soybean oil. Stir fry garlic, chile paste, green onions, chile pods until fragrant (5-10 seconds). Add sauce and bring to a boil with the sugar and Sriracha. Stir 1 TB of water into the cornstarch and add to the sauce to thicken. Toss chicken and veggies in sauce and serve over cooked rice or noodles.
