Crispy Fried Catfish

We get some fried fish tips while talking about a special charity event at the Cotton Patch Cafe.


Crispy Fried Catfish

1 cup all purpose flour
1 Tbl kosher salt
1/2 tsp cayenne pepper
1 tsp granulated garlic
2 tsp black pepper
2 lbs corn meal
catfish filets (as needed)
iced water (as needed)
vegetable oil (as needed)

Depending on what size pan you have or table top fryer, make sure you have enough vegetable oil to be 4- 6 inches deep. turn on heat and maintain at 350 degrees

Combine all seasoning ingredients and mix until incorporated.

Place in a mixing bowl or half size baking dish

Cut catfish into approximately 2 oz pieces

Place ice water in a medium mixing bowl

Dip catfish in ice water, shake off excess water and place into seasoned cornmeal. Make sure to cover both sides by slightly pressing catfish down into cornmeal.

Shake off excess cornmeal.

Gently place catfish into oil, do not cook more than 6- 8 pieces at a time.

Cook for 4 minutes for regular or 5 minutes for extra crispy.

Place in a pan lined with paper towels, serve immediately with cocktail or tartar sauce and a fresh lemon wedge.
