Cilantro Mint Vinaigrette

Chef Jacob Williamson from Five Sixty by Wolfgang Puck at the Reunion Tower makes shrimp topped with a cilantro mint vinaigrette. The Reunion Tower is a popular spot for lovers and is offering special Valentine's Day packages.


Cilantro Mint Vinaigrette over Shrimp

1/2 cup pickled ginger
2/3 cup ginger vinegar
2T Chinese mustasrd paste (Or Dijon)
1/4 tsp sambal
2 ea. egg yolks
1 tsp chopped garlic

Add all ingredients in blender, blend until smooth.

2 cups cilantro leaves
1 cup mint leaves

Add to blender, being careful not to let it heat up too much.

2 cups peanut oil
1 tsp sesame oil
1 tsp sugar
1/2 T salt

Slowly add oils to liquid in blender, season with salt and sugar.
