Christmas Cookies for Santa

Chef Tom Fleming from Crossroads Diner returns to Good Day to share a recipe for Christmas cookies. You and your little ones can bake them for Santa.


Christmas Cookies for Santa 

Serves 1 large Santa

¾ cups plus 2 Tbsp. sliced skin-on almonds
¾ cup powdered sugar
5 oz unsalted butter
¼ Tsp. ground cloves
1 ¼ Tbsp. lemon juice
1 whole egg
1 ¼ cup flour
Sugar in the raw to sprinkle on top

Pulse almonds and sugar in food processor until it becomes a fine meal. In a stand mixer, whip butter until soft. Mix in almond/ sugar mixture. 

Whip egg and lemon juice in a separate bowl and add to the almond mix. Add flour into mix. Remove from bowl and roll into cylinder in parchment paper. Cool in refrigerator for one hour. 

Cut dough into 1/4'’ circles and place on greased cookie sheet. Sprinkle with sugar in the raw. Bake at 300 degrees until golden brown, about 10 to 15 minutes.
