Chevre Stuffed Mushrooms

Audrey McGinnis from Every Girl Gourmet stops by Good Day to make one of her most popular appetizers.
 

Chevre Stuffed Mushrooms

24 medium sized button mushrooms 
1/3 cup unsalted butter
2 tsp. minced onion
¾ cup breadcrumbs
2 Tbs. fresh parsley, minced (if using dry, only use 1 TBS.)
2 Tbs. lemon juice
½ tsp. salt
3 oz. Chevre goat cheese (3/4 cup)
½ cup blue cheese, crumbled

Clean mushrooms off with a damp paper towel to remove any soil.  Remove stems and set aside.
Finely chop mushroom stems and set aside.
