Bratwurst Sliders

Carl Nimmo from Gordon Biersch in Dallas and Plano stops by Good Day to make mini bratwurst sliders made from scratch with handcrafted beer.


Mini Bratwurst Sliders

12 Bratwurst
8 cups of water
8 cups of Dark Beer

Caramelized Onions
    Half a yellow onion, cut in half (thinly sliced)
    1 oz. of canola oil
    1Ž4 cup of granulated sugar
    1 oz. dark beer
    Pinch of salt & pepper

Marzen Mustard
    2 tablespoons dark beer
    2 cups of whole grain mustard
    1.5 cups of Dijon mustard
    3Ž4 cups of mayonnaise
    Pinch of granulated sugar

Boil Bratwurst until cooked all the way through. 

While brats are cooking we will caramelize the onions. Heat canola oil in a sauté pan, when oil is hot add the sliced onions; cook for 4-5 minutes. After onions have softened, add sugar salt & pepper and stir. Lastly add dark beer and continue cooking on low heat.

While the onions soften up a little more and the brats finish boiling we will mix the mustard and warm our pretzel buns. Cut buns down the center and place on griddle.

Add whole grain mustard, Dijon mustard, mayonnaise, granulated sugar and dark beer into a mixing bowl. Stir ingredients with a whisk.

By now the brats should be done cooking. Place the beer poached brat in a warm pretzel bun; top with caramelized onions and drizzle with beer mustard.
