Turkish Chicken Kebab

Shon Celik from the Turkish Cafe & Lounge in Plano shares the recipe for an authentic chicken kebab with a Turkish marinade.
 

Turkish Chicken Kebab

5 pounds of cleaned chicken breasts, cut into cube (if you don’t have skewers, just use clean plain chicken breasts)
3 tablespoon of pepper paste
3 tablespoon of tomato paste
1 tablespoon of oregano
1 sprig of fresh rosemary
1.5 tablespoon of fresh ground garlic
2 cups of olive oil
5 tablespoons of plain yogurt
2 tablespoon of salt
3 tablespoon of Turkish red pepper spice (you can obtain at any Asian supermarket)

In a mixing bowl combine olive oil, yogurt, pepper paste and tomato paste.  Mix until it becomes a nice red color. Add the remaining spices and mix until thoroughly combined. 

Pour mixture on top of the chicken. Grill, bake or sauté until cooked thru.

Serve with pita bread, rice and enjoy!
