The folks from Perry's Steakhouse stop by Good Day to make bruschetta.
Roma Tomatoes – 10
Fresh Basil (chiffonade) - .3 oz.
Pecorino Cheese (grated) – 3 tbls.
Red Onion – 1.5 oz.
Iodized Salt – 1 tsp.
Black Pepper – ½ tsp.
Olive Oil – 4 tbls.
Garlic – 1 tbls.
Reduced Balsamic – Drizzle as needed
Crostini with Olive Oil – 25
Combine all ingredients except balsamic, crostini and pecorino cheese. Place tomato mixture on top a crostini. Place pecorino cheese on top of bruschetta mixture. Garnish each bruschetta with reduced balsamic.
