Ham, Leek, Potato and Vegetable Soup

Ham, Leek, Potato and Vegetable Soup
3 tablespoons Olive oil
1 onion, peeled and chopped
1 stick celery, finely chopped
2 carrots, peeled and cubed
1 large leek, white only, washed and diced
3lbs Yukon potatoes, peeled and chopped
4 cups sliced cabbage
1 tablespoon chopped thyme
5 cups chicken stock
1 ham hock
1 cup diced Bavarian ham
Fresh parsley
Sea Salt and freshly ground pepper
Heat soup pot over medium heat and add olive oil. Add the onion, celery, leeks, carrots and thyme and cook on a low heat for about 10 minutes, stirring regularly, until they have softened. Add the ham hock, potatoes and cabbage. Add the stock, lower the heat and simmer for 30 minutes. Add ham and season with salt and pepper. Garnish with parsley and serve.
