Masterchef is coming to North Texas to look for the next star home cook. Do you have what it takes? Chip Waggoner is ready to impress the team this morning with his favorite quesadillas recipe.
Chip's Chicken Quesadillas
1 ½ lbs chicken
1 not so secret chicken rub (Kickin’ Chickin + ancho chili rub combo)
1 red pepper, cut in medium dice
1 yellow pepper, cut in medium dice
1 yellow onion, cut in medium dice
1 jalapeno, cut in medium dice
1 tbsp butter if desired for grilling
2 cups shredded cheese (Monterrey Jack, Colby, Asadero)
For topping: sour cream, guacamole, pico and salsa
Season raw chicken breast evenly. Grill chicken. Chop all veggies and grill several minutes over medium heat.
Once slightly cooled, cut cooked chicken into small cubes. When all veggies are fully cooked, set aside.
Next, assemble the quesadillas! Heat pan over medium heat (butter grill pan if desired); place the first tortilla down and fill with meat, grilled veggies and cheese as desired in between. Top with the second tortilla, flip once when golden brown and cook on the second side. Grill & voila!!
Once cooked, top to your liking with sour cream, guacamole, pico, and salsa.
