Caribbean Mango Grilled Fish

The folks at On The Border are helping us celebrate National Margarita Day with margarita specials and a delicious fish dish.

Caribbean Mango Grilled Fish   

4 fillets approx. 6-8 oz Tilapia (or your favorite fresh fish)
2 tsp Chile Powder
Salt to taste
4 Tbsp Butter
Mango Salsa (recipe below)

Mango Salsa:
1 cup Mango, diced
½ cup Tomato, diced
¼ cup Onion, diced 
2 Tbsp Cilantro, chopped
2 tsp Jalapeno, chopped
Salt to taste
1 lime Lime Juice

Mix all ingredients for the mango salsa and reserve. 

Season fish with Salt & Chile Powder. Grill fish for 3-5 minutes on each side turning only once.

Heat butter in a saute pan over medium heat. Add mango salsa into the pan with the butter and heat for 1-2 minutes.

Plate fish with rice and vegetables. Pour the warm salsa over each fillet.
