Great Granola

Rolled Oats (not instant or quick): 2 cups

Chopped pecans: 1/2 cup

1/3 tsp cinnamon

1/8 tsp salt

Mix dry Ingredients, and set aside.

In a separate bowl, combine the following ingredients, and heat for 30 seconds in the microwave to melt the honey:

1/4 cup honey

1/8 cup maple syrup

1/4 cup olive oil

Stir in 1/2 tsp vanilla.

Add the wet ingredients to the dry ingredients, and stir to combine.

Cover a cookie sheet with parchment paper, and spread the oat mixture in one even layer.

Bake at 375 degrees for approximately 12--15 minutes.

As soon as the edges begin to turn brown, remove from the oven and cool completely.

Place the cooled contents into a bowl and add: ½ cup dried cherries.

Never bake the cherries with the oats!
