Spicy Steak Po'Boy
Chef Cedric McCoy from Mr. Po'Boys stops by Good Day to make a steak sandwich with a spicy remoulade sauce. Chef McCoy went into business with a culinary school classmate and now they're competing on 'The Great Food Truck Race' on the Food Network.
Steak Po' Boy with Spicy Remoulade
6oz flank steak
½ cup shredded lettuce
1 tomato
1 egg
6-inch French baguette
Steak Seasoning:
1 tsp chopped oregano
1 tsp chopped parsley
1 tsp Fresh minced garlic
1 tbsp vegetable oil
Salt and pepper to taste
Spicy Remoulade Dressing:
½ cup mayo
1 tsp lemon juice
1 tbsp cayenne pepper
1 tbsp chopped dill pickles
1 tsp chopped yellow onion
½ tsp minced garlic
Coat steak with seasoning and let set for 10-15 minutes. Combine all remoulade components in small bowl and mix until combined.
Grill or sauté steak in skillet to preferred doneness (5-7 minutes for medium well). After steak rests for at least 2 minutes, slice thin strips against the grain.
Slice baguette in half horizontally with serrated knife. To assemble the sandwich, spread remoulade on baguette, add sliced steak, shredded lettuce, and sliced tomato.
Top with over-medium egg (cook egg for 1 - 2 minutes on each side without breaking the yolk. The white should be cooked and firm and yolk should be bright yellow and runny).
