Hearty Holiday Italian Meatballs

Chef Tom Flemming from Spezzo shows you how to incorporate the whole family into your Valentine's Day. He makes a kid-friendly meatballs dinner.

Meatballs

1 lbs ground pork
2 lbs ground beef
½ lbs yellow onions
2 tbs Italian seasoning
½ tsp crushed red pepper
1 tbs salt
1 tbs pepper
2 tbs minced fresh garlic
½ lbs panatta

Mince garlic. Finely chop onions and reserve. Make panatta in separate bowl and reserve. Combine all ingredients in large bowl and season with salt and pepper. Form into 4.5 oz  portions and reserve. Place in 2" hotel pan and cover with 1 oz marinara sauce per meatball.  Bake in oven at 325 degrees until done. Rough 45 minutes in oven.


Panatta

¼ lbs bread crumbs
5 oz whole milk

Remove crust and save for bread crumbs. Chop bread into medium dice and place in small bowl. Cover with milk and mix until all incorporated. Reserve and use as needed with meatball recipe.
