Tzaziki-feta cheese sauce
Recipe By: CHEF KENT RATHBUN Serving Size: 8 Ingredients: - FOR THE TZAZIKI-FETA CHEESE SAUCE - 2 quarts Greek yogurt (Kaffir Cheese), thick - 1/4 cup extra virgin olive oil - 1 cup English cucumber, diced small, seeded, salted and drained - 2 tablespoons garlic cloves, peeled and minced - 1 cup red onion, peeled and diced small - 1 cup red tomato, outside only, diced small - 2 tablespoons ground cumin - 1/2 cup parsley, chopped fine - 1/4 cup mint leaves, chopped fine - 4 tablespoons lemon zest, grated - 4 tablespoons lemon juice, freshly squeezed - 2 cups feta cheese, crumbled Directions: FOR THE TZAZIKI-FETA CHEESE SAUCE: 1. In a mixing bowl, mix greek yogurt, olive oil, cucumbers, garlic, red onion, tomato, cumin, parsley, mint, lemon zest, lemon juice and feta cheese together. 2. Cover and store properly.
