Celebrate National Muffin Day with these healthier muffin options from Utopia Food and Fitness.
 

Chocolate Malt Muffins

Makes 12 mini muffins or 4 to 5 regular muffins.

2 cups all purpose flour (sifted)
½ cup semi sweet chocolate chips
2 Tbls powdered milk    
1/2 cup malted milk
¼ cup egg whites
2 Tbls sugar
1 tsp baking powder
1 tsp baking soda
¾ cup water

Mix flour, sugar, powdered milk, baking soda and baking powder in a large bowl and mix well.  Melt chocolate chips over a double boiler. Add melted chocolate, egg whites and water to dry ingredients and mix well. Spray a muffin tin with nonstick baking spray and pour in batter to just below the rim of the cups. Bake at 350 degrees for 18 minutes. Mix the malted milk with 2 tsp of water and stir until it is frosting like in consistency. When muffins are cool brush with the malt frosting. 


Blueberry Muffins

Makes 12 mini muffins or 4 to 5 regular muffins.

2 cups all purpose flour (sifted)
1 cup fresh blueberries
¼ cup egg whites
2 Tbls powdered milk
2 Tbls sugar
1 tsp baking powder
1 tsp baking soda
¾ cup water

Mix all dry ingredients (flour, sugar, powdered milk baking soda and baking powder) in a large bowl and mix well.  Add fresh blueberries, egg whites and water to dry ingredients and mix well. Add remaining ¼ cup of chocolate chips and stir gently to mix evenly throughout batter. Spray a muffin tin with nonstick baking spray and pour in batter to just below the rim of the cups. Bake at 350 degrees for 18 minutes.
