Southwestern Potato Salad

Southwestern Potato Salad

Dressing Mixture:
½ Cup Mayo
1 cup sour cream
2 TSP Chili Powder
2 TSP Cumin
1 TSP Salt
whisk together and cool

Vegetable preparation:
2lbs red potatoes- diced and cooked until fork tender.
Strain potatoes in colander and let cool in refrigerator

In a separate bowl mix the following items:

½ lb cooked fresh corn removed from cob
2 green onions chopped
½  lb red bell pepper- diced
½ Poblano pepper diced
2 bushels cilantro finely chopped

Mix vegetables in with potatoes in a large mixing bowl after cooling. Add dressing into mixture and let cool in refrigerator for 1 hour. Stir before serving.

Yields 8-10 servings
