It's National Pizza Day. Chef Kent Rathbun helps us celebrate with one of his favorite pizzas at Greenville Avenue Pizza Company.
Rathbun’s Wild Turkey
Start with a 13oz Dough Ball/ Roll to desired size
4-6 oz of Alfredo Sauce
5 oz Mozzarella Cheese
3 oz of Gruyere Cheese
3 oz of Spinach
3 oz of mushrooms
3 oz of caramelized onions
6 oz Smoked turkey
2 pieces of Prosciutto
Bake at 500 degrees for 6 minutes
2 oz of cranberry sauce (on top or on the side)
Cranberry-Basil Relish
24 ounces cranberries
8 ounces orange juice
4 ounces sugar
2 tablespoons orange zest
2 tablespoons basil, chopped
In a small sauce pot, add the cranberries, orange juice and sugar. Bring to a boil for 5 - 7 minutes or until the mixture starts to thicken. Remove from heat and let cool. Add in orange zest and basil, and serve.
