Chef Roland Dickey from Dickey's Barbecue joins Good Day to kick off National Barbecue Month. He makes smoked pork butt tacos with a homemade spice rub.


Pulled Pork Street Tacos

.75 ounce pulled pork
1 ounce cole slaw
1 ounce barbecue sauce
2 4-inch corn tortillas, heated for 10 seconds

Rub 7-8 lb raw pork butt with favorite rub or marinade, covering all surfaces (rub recipe included below). Marinate for 24 hrs in the refrigerator.

Smoke for 13-14 hrs at 225 degrees and remove.

Heat tortillas and stack two together. Portion out pulled pork and place in the tortillas. Add cole slaw. Drizzle with barbecue sauce. Enjoy!


Rib-Ticklin' Rib Rub

1/2 cup salt
1 cup sugar
1/4 cup paprika
1 1/2 tbsp granulated garlic
1/2 tbsp ground cumin
1 1/2 tbsp lemon pepper

Thoroughly combine all ingredients. You can store this rub in an airtight container for up to three months.
