Ancient Grain Salad from Fogo de Chao


Ingredients
2 Cups Quinoa, cooked and cooled
2 Cups Kasha, cooked and cooled
2 Cups Wild Rice, cooked and cooled
1/4 Cup Chia seeds 
1/4 Cup red onion, finely diced
2 Granny Smith Apples, small dice
1/4 Cup celery leaves
1 Cup pomegranate seeds 
1 orange, cut into segments salt and pepper

Preparation
1. Follow package directions to cook quinoa, kasha, and wild rice. Cool in refrigerator. Once cold, add all grains and seeds to salad bowl.
2. Add onion, apples, celery leaves, and half the pomegranate seeds. 
3. Prepare Honey-Lime dressing and pour over salad. Toss gently.
4. Sprinkle remaining pomegranate seeds and orange segments over salad.
5. Season with salt and pepper to taste.

Honey-Lime Dressing
Place 1/2 Cup white wine vinegar, 1/4 Cup honey, 1/4 Cup freshly squeezed lime juice, 1/4 Cup extra virgin olive oil, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper in a small mixing bowl. Whisk until combined.
