2 lbs Pork, ground
¼ cup Shallots, finely chopped
¾ cup Green Onions, sliced thin
1 TBL Black Pepper, coarse
2 TBL Fish Sauce
3 TBL Honey
3 TBL Caramel
2 heads Bibb Lettuce Leaves
½ Bunch Fresh Cilantro
¾ Cup Fresh Mint leaves
Mix pork, shallots, green onions, black pepper, fish sauce, and honey. Massage all ingredients together until well incorporated. Let sit 30 minutes to marinate.
Portion into 2 inch "cookies." Cook on the grill for 8 minutes (4 minutes on each side) until cooked through and has nice char.
Serve with bibb lettuce leaves, mint leaves, and cilantro leaves as a lettuce wrap.
