Poblano Creamed Corn

Jordan Swim from Carlton Provisions at Legacy Hall in Plano stops by Good Day to make a poblano creamed corn and show off some signature brisket, ribs, and sausage.

Poblano Creamed Corn

6 T Butter
1/2 Cup Diced Onion
6 T Flour
1 Quart Half and Half
1 pound fresh corn
1 pound corn
4 T Sugar
1 Roasted Poblano
1 Roasted Jalapeno
Kosher Salt and Fresh Ground Pepper to Taste
Pinch of Cayenne

Saute Onion in Melted Butter til translucent. Sprinkle in flour and form roux. Add in Half and Half to form béchamel. Add in Corn and simmer. Add sugar to taste. Add in peppers and simmer for 5 minutes. Season.
