Komali Chicken Salad

Chef Hugo Galvan from Casa Komali stops by Good Day to make a different kind of chicken salad.
 

Komali Chicken Salad  

5 oz. chicken, marinated
Marinate (1 jalapeno, 1/2 bunch cilantro, 1/2 onions, 2 garlic cloves and 3 oz olive oil. Put all ingredients in the blender)
1.5 cup arugula
½ avocado, diced
¼ cup marinated tomatoes halved
3 tbsp pasilla shallot vinaigrette
2 tbsp roasted corn
3 oz crispy tortilla strips 
1 oz cotija cheese

Toss arugula with the Pasilla Shallot Vinaigrette.  Add avocado, tomatoes, corn and tortilla strips. Place the cooked Chicken on top (diced)  
 
Pasilla Shallot Vinaigrette

1 Caramelized fine chopped shallots
1 garlic cloves
1 tsp chopped cilantro
2 tsp red wine vinegar
1 tsp pasilla flakes
1 cup of blend oil (½ for saute and ½ for vin blend)

In pan add 1/2 cup oil and caramelize shallots and garlic.  Turn off heat and let cool. Add to cooled recipe 1/2 cups oil, cilantro, red wine vin, pasilla flakes and salt and pepper to taste.  Mix well.
