Green Goddess Hummus

Chef Suki Otsuki from Mudhen Meat and Greens returns to Good Day to make a special hummus.

Green Goddess Hummus

1 qt cooked garbanzo beans (dried beans, soaked overnight and cooked in water)
1/4c tahini
1 c parsley
1/4 c tarragon
1 c spinach 
3 ea garlic cloves
1/2c water
1/2c olive oil
1c lemon juice
Salt to taste

Combine everything except garbanzos in a food processor.  Make a pesto-like puree. Add the garbanzos and puree until smooth and whipped.
