Gluten-Free Chocolate Pudding
Approximately 9-10 dates, soaked in water / slightly less than 1/2 cup for Soak dates for at least 30 minutes and up to two hours.
1/2 cup raw cashews
1 1/4 cup cooked, mashed sweet potato
1/3 cup cocoa powder
1/2 cup + 2 Tablespoons coconut sugar
2 teaspoons vanilla
3/16 teaspoons salt
1 2/3 cup water
Soak dates for at least 30 minutes and up to two hours.
Puree in Vitamix or another high-speed blender until very smooth.
You will need to scrape down sides a couple times.
Pour blended pudding into cups. You don't have to refrigerate but it does thicken as it sits.
