Carne Asada and Waffles

Chef David McMillan from Bird Cafe makes a delicious dish from the new brunch menu.


Carne Asada Marinade, Meat & Cooking

8 garlic cloves
1 jalapeno
1 oz lime juice
1 oz canola oil
2 tsp salt
1 Tbsp dry oregano
4 Tbsp ancho chile powder can sub regular chile powder
2 lbs Flap meat or skirt steak
1/2 c water

Roast garlic & jalapeno in in pot with oil

Add chile powder, lime juice, oregano, water & cook on low heat.

Puree all.

Marinate meat overnight.

In a hot pan or on a grill sear/char the meat.

Cook till desired doneness, let rest 5 minutes.

Slice meat across the grain about ¼" thick

Proceed with plating or hold meat at room temp or refrigerate till you need it.


Pepper & Onion mix

2 bell peppers sliced
1 Onion, white sliced

Cook peppers & onions in a little oil till soft & tender.

Mix with sliced meat.


Coffee Maple Syrup for Carne Asada Waffle

2 cups Maple syrup    
1/4 cup Dark coffee grinds  OR 1 1/2 tsp. Intant coffee    
1/ 4 cup Water             
1/2 tsp Salt         

Bring all to a boil.

Reduce heat to a simmer for 5 minutes.

Hold warm.    


To Plate

4 Belgian waffles    
Carne asada mix, cooked (the meat and veggies above)         
1 1/2 Coffee Maple Syrup         
8 springs Cilantro             
2 oz Cotija                        

Heat Waffle    

Heat cooked carne asada mix    

Set waffle in the center of a large plate with asada mix on top.    

Lay cilantro sprigs over top and sprinkle with cotija

Drizzle warm coffee maple syrup over all.

Serve immediately.


Notes

You can buy pre-sasoned Asada meat or make your own with the included recipe.                

You can make the Coffee Maple Syrup or just use Maple syrup, just make sure it is a good one!
