Juan Noriega from Ra Sushi Bar stops by Good Day to make delicious shrimp tacos.
"RA"ckin' Shrimp Tacos
⅓ c Panko bread crumbs
3 large unshelled shrimp
3 fried gyoza skin shells
3 Tbsp prepared coleslaw
4 Tbsp prepared guacamole
3 tsp Ginger teriyaki sauce
3 Tbsp of diced red bell pepper
Cover 3 large, unshelled shrimp in spicy panko breadcrumbs. Fry the shrimp in oil until golden brown. Remove from the pan and drain. Cut each of the 3 pieces of "RA"ckin Shrimp in half, making 6 total pieces.
Fill each fried gyoza skin shell with 1 Tbsp of prepared coleslaw. Add 1 Tbsp of guacamole on top of the coleslaw. Add two large pieces of "RA"ckin' Shrimp to the top of the guacamole.
Top each taco with ½ tsp of Ginger Teriyaki sauce. Add a ½ tsp of guacamole to the top of each taco. Garnish with diced red bell pepper.
