Tropical Fruit Foster

James Amster's Tropical Fruit Foster

Star fruit, 3 slices
1/4 Papaya, seeded and sliced
1/8 Pineapple,  Cut into cube
1/4 Mango, Julienned
3 Strawberry Sliced
3 kumquats, slivered
12 pomegranate pearls
6 Fried plantain chips. Sliced thin and fried for 2 minutes or so. When they start to brown and you can see the veins, they are done.
1/4 c. Brown sugar
1/3 stick Butter
2 shots (3-4 oz) Brandy
Cayenne, a pinch
Garam masala a pinch
Smoked sea salt, a pinch
Cinnamon ice cream, 3 scoops

Melt butter in a hot pan
Mix in brown sugar and butter until granulation breaks down. Add cayenne
Put in star fruit, followed by all other fruit but not strawberries.
Flambé with liquor. Make sure to remove pan from any open flames when pouring liquor! Set aflame with the flames from your stove or a long match or safety lighter.
Scoop ice cream onto plates
Add strawberries
Pour sauce and fruit over ice cream
Garnish with garam masala plantain chips and smoked sea salt.
Serve immediately
