Breakfast Burrito

Ingredients

4 oz flat iron steak

2 tblsp diced pepper trio (yellow, red & green bell peppers)

2 tblsp diced tomato

2 tblsp diced red onion

2 tblsp green onion

1/3 cup crispy potato fries cut ¼ x ¼ inch

2 tblsp cilantro leaves

1 (12 inch) flour tortilla

3 oz ranchero sauce

1 oz sour cream

1 egg

2 oz shredded Jack Cheese


Procedure

1. Cook skirt steak to medium rare, rest, and dice

2. In a small pan, sauté peppers, tomato, onion, green onion, and potatoes

3. Add steak and cilantro

4. Wrap burrito in 12 inch flour tortilla and seal on the flat top

5. Once sealed, plate it and coat with ranchero sauce

6. Cook egg sunnyside up

7. Finish burrito with sour cream, egg, and a pinch of chives


Ranchero Sauce

1 medium yellow onion cut ¼ and grilled

3 jalapenos grilled then rough chopped

5 Roma tomato grilled

1/2 tsp of roasted garlic

1/2 tsp of salt

1/2 tsp of pepper

1/2 tblsp of cumin

1/4 cup of cilantro

1/2 cup of ground tomato

1. Grill all vegetables

2. Combine grilled vegetables, spices, ground tomato and cilantro

3. Blend it in a blender

4. Taste and adjust seasoning
