Smoked Turkey Leg and Ribs

Rub (for both Turkey Leg & Ribs)

1/2 lb. chili powder

1/2 lb. paprika

2 oz. garlic powder

1/2 lb. course grind black pepper

3 lbs. salt

Mix thoroughly


Smoked Turkey Leg

2-lb Texas-made turkey leg (raw)

Dust leg completely w/ rub from shaker (see rub ingredients)

Put on the smoker using oak wood (or in the oven at home) at 225-250 degrees for two hours (or until they reach 165 degrees internal temp)

Remove turkey leg from smoker

Let it "rest" for 30 minutes

Enjoy


Beef Ribs

Start w/ prime-grade beef rib slab (6-7 ribs in slab)

Dust w/rub from shaker on top and bottom of rib slab (see rub ingredients)

Put on the smoker using oak wood (or in the oven at home) at 225-250 degrees for 3-4 hours (or until they're fork-tender or can easily break apart)

Remove ribs from smoker

Let it "rest" for 30 minutes

Cut the ribs

Enjoy!
